- Prepare 800 grm Chicken breast cubes
- You need 1 cup Raw rice
- Take 1/4 cup Bengal gram or chana dal
- Get 1/4 cup Pigeon pea lentils or toor dal
- Take 1/4 cup Red lentils
- Use 1/4 cup Black gram or urad dal
- Prepare 1 1/2 cups broken wheat or daliya
- Get 1/4 cup Ghee
- Take 1/4 cup Oil
- Get 1 1/2 tbsp salt
- You need 2 tsp red chilli powder
- Provide 1 tsp blackpepper powder
- Use 1 tsp turmeric
- Get 1 tsp garam masala
- You need 2 cups fried onions
- You need 3 green chillies chopped
- Get 2 tbsp ginger garlic paste
- You need 1 cup curd
- You need 1/4 cup coriander leaves finely chopped
- Use 1/4 cup mint leaves finely chopped
- You need 1/4 cup Ginger Juliennes
- Use 5-6 lemon wedges
- Provide 2 cinnamon sticks (whole garam masala or khada masala)
- Prepare 10 blackpepper corns
- Get 10 cloves
- Use 1 tsp caraway seeds
- Provide 1/2 tsp cubeb pepper powder
Instructions to make Hyderabadi Chicken Khichda:
- First of all deep fry the onions and set aside. Soak rice, broken wheat and lentils overnight.
- In a pressure cooker, add soaked rice and lentils along with half a litre of water. Add salt to taste and pressure cook for 6 whistles.
- Meanwhile cook broken wheat in a pot until done. Cover and simmer on a low heat for about 20 to 25 minutes.
- Now to another cooking pot, add oil and ginger garlic paste along with all the 5 khada masalas mentioned. Fry them all for a minute and then add the chicken cubes. Also add all the spices along with the beaten curd and cook until done. After done, mash it well with a masher and keep aside.
- To this cooked chicken add the pressure cooked rice and lentil mix. Let the broken wheat cool down a bit before grinding it to a smooth paste. Or better still use a traditional gothni that is used for mashing it.
- Add this broken wheat to the chicken and lentil mix first and then mash it if using a traditional gothni. Also add fried onions.
- Add ghee to it along with chopped coriander and mint leaves. Adjust salt and sprinkle garam masala on top. Serve it hot with lemon wedges, fried onions and ginger juliennes.
