  9. Prepare 1/2 cup cream

Instructions to make Kunafa:
  1. Make simple sugar syrup with sugar & water.let sugar dissolve complately in water.simmer it for some time until syrup is some little thickened.remove from heat.add lemon juice & rose water. Keep aside.
  2. Add melted butter into the crushed pheni. And mix with hands to ensure proper mixing.
  3. Kunafa is traditionally made from special kunafa dough known as kataifi. I used leftover pheni from Ramadan. I crushed the pheni by hand in a big pan.
  4. Make filling. Take milk in a pot.add cream,sugar,cornflour in milk & whisk to mix altogether.I hv use whipping cream.u cn use cream if your choice.
  5. Now keep pot at low flame.whisk gently till mixture thickens. Add mozzarella & cottage cheese & keep stirring till cheese is melt & smooth mixture is formed.add rosewater aftr removing from heat.
  6. Grease tin slightly.round or square any shape.add 2/3 of crushed buttered phainis in pan.evenly spread it & press firmly into bottom & edges.
  7. Spread cheese filling over pressed phanies.make even layer at crushed vermacillies
  8. Spread remaining phanies over cheese filling. Press evenly with spatula. Brush with 1 -2 tbsp melted butter.
  9. Keep in preheated oven for 25-30 min at 180°c till the top is slight golden & edges of dough are brown & bubbly
  10. Take out from oven. Give rest for some time. Invert the dish so that buttered phaini pressed bottom layer is at top.
  11. Pour sugar syrup at top gently.
  12. Garnish with chop pistachios. Enjoy sweet,crispy Kunafa with creamy softness of cheese filling & fragrant aroma.
