- Take Plantain (Ripe or unripe) (4 medium size)
- You need Carrots (2 medium size)
- Use Scotch bonnet (4 large)

- Wash plantain, peel, place in a pot of water and set to boil (add salt if you want).
- Wash and cut pumpkin leaves, carrots, fresh tomatoes, red chilli pepper, scotch bonnet, and onion.
- Wash fish thoroughly, place in a clean pot, add seasoning and cook till fish is properly cooked.
- Heat oil in a sauce pan, add sliced onion. Stir for 10seconds and add chopprd tomatoes, red chilli pepper, scotch bonnet, and cook for 3 minutes.
- Add chopped carrots and stir for 2 minutes. Add seasoning cube and salt to taste. Stir well.
- Add fish stock to the mixture, add fish, add chopped vegetables. Stir well
- Cook for 2 minutes and its ready. Serve with boiled plantain and boiled egg(optional)๐
